Activating the Yeast
To start your quick hot dog bun recipe, you’ll first want to prepare the yeast . Yeast is essential in achieving the desired fluffy texture of your buns. In this recipe, we’ll use instant yeast, warm milk, and sugar in our yeast preparation.
Gather your ingredients: active dry yeast, warm milk (110° to 115°), and sugar. And mix them in a bowl. The temperature of the milk is important, as it should be warm enough to activate the yeast but not too hot to kill it. A handy tip to check the temperature is to dip your finger into the milk – it should feel comfortably warm but not too hot to touch.
Allow it to sit for about 5 minutes or until it becomes bubbly and foamy. This is an indication that the yeast is active and ready for use in your hot dog bun dough.
Creating the Dough
Combine your ingredients. Mix the dry ingredients: flour, salt, and sugar in a large bowl.
mix in the wet ingredients, oil, yogurt, water and yeast preparation. Gradually incorporate them into the dry mixture until you have a well-combined dough.
Use the stand mixer, to knead the mix with the dough hook attachment for approximately 5 to 7 minutes.
Shaping the hot dogs
Once the dough has risen, divide it into equal portions and shape each portion into a long, thin log. This will be the basis for your hot dog buns. You will get 12 buns of 86 grams.
Place the shaped buns on a parchment-lined baking sheet, leaving about an inch of space between them.
Allow the buns to rise again before baking, ensuring they have doubled in size.
Baking instructions
Preheat the oven to 370°F.
In a bowl, crack an egg and pour 2 tablespoons of water to create an egg watch. Brush the buns with the egg wash. This step is optional.
When the oven has reached the temperature, place the tray in the oven and bake for 15 minutes or until the buns are golden light.
Remove the buns from the oven and let them cool on a wire rack.
