You won’t need many ingredients for this recipe. You can also adjust the ingredients to the number of people you are having for dinner or lunch.

I cooked for 4 people, one pork chop per each.

You can either use bone-in or boneless pork chops. This Pan Fried pork chops with apricot Glaze will work great with both.

I prefer bone-in, but I had run out of them, so I used boneless. So I leave that decision to you.

Now this is when things get interesting. For the apricots, use 1 cup of chunk apricot snack in light syrup.

Sugar to thicken and add that lustrous glaze you see in the picture.

Since I didn’t want to mess up with textures, I added Garlic powder instead of fresh garlic.

Additionally, the cooking wine adds depth, acidity, sweetness, or a subtle tang to this recipe.

Lastly will add vinegar to balance the sweetness from the other ingredients and end up with a more valance dish full of flavour combinations.

Apricots or peaches?

You can use either of them. Apricots and peaches are quite similar in flavour, and in the snack package you will use for this recipe, you won’t know for sure the difference.

So you can use what you have on hand.

If you have a can of apricots or peaches in syrup instead of the snack cups. Use the can and measure a cup to follow this recipe.

  1. Season the pork chops generously with salt and pepper on both sides.
  2. In a bowl, add all the ingredients: Apricot chunks with the syrup, sugar, garlic powder, cooking wine, and vinegar.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Once the oil is hot, add the pork chops to the skillet and cook for about 4-5 minutes per side or until they are nicely browned and cooked through. 
  5. Adjust the cooking time based on the thickness of the chops. 
  6. Remove the cooked chops from the skillet and set them aside on a plate, covering them loosely with foil to keep them warm.
  7. In the same skillet, reduce the heat to medium. Add the ingredients you mix to the bowl. 
  8. Cook the mixture for 2-3 minutes, stirring occasionally, until it thickens slightly and becomes glossy.
  9. Return the pork chops to the skillet and spoon the apricot glaze over them.
  10.  Cook for an additional 1-2 minutes, allowing the chops to absorb some of the flavours from the glaze.
  11. Remove the skillet from the heat. Let the pork chops rest in the glaze for a minute or two.
  12. Serve the pan-fried pork chops with the apricot glaze, spooning any remaining glaze from the skillet over the top. 
  13. Garnish with chopped fresh parsley or cilantro, if desired.
